Milad Alexandre Mack Atala (born July 3, 1968 in São Paulo, Brazil), is a Brazilian chef and former DJ who runs the restaurant D.O.M. in São Paulo. He works by transforming classic, traditional Brazilian dishes by adopting the French and Italian cuisine’s techniques and, at the same time, using indigeous Brazilian ingredients.

Atala was born in the neighborhood of Mooca in São Paulo, from a middle-class family of Palestinian origin. His father, Milad Atala, was an employee of a rubber factory. Atala was raised in the city of São Bernardo do Campo. At the age of 14, he left his family home and went to live in São Paulo, where he worked as a DJ in the night club Rose Bom Bom.

When he was 18, he went on a backpacking trip to Europe. He first worked as a wall painter in Belgium. Following a friend’s suggestion, he enrolled himself in a catering college. After his graduation, he has worked in restaurants in Belgium, France and Italy, where he has shaped his gastronomic skills besides learning to speak English, French and Italian.

In 1999, he opened the restaurant D.O.M.

Fifteen

Fifteen is a restaurant in London, owned and run by the celebrity chef Jamie Oliver. He created the restaurant as part of a 2002 TV series, Jamie’s Kitchen, broadcast on Channel 4. Jamie Oliver recruited fifteen unemployed young people, some homeless and others with learning difficulties, and trained them from scratch to become professional-standard chefs. This continued after the TV series finished, and the restaurant has become a resounding success. Many of its graduates have moved on to other top restaurants in London.

Fifteen was also featured in the follow-up series, Return to Jamie’s Kitchen and provided a backdrop to the 2005 series Jamie’s School Dinners. The restaurant is a charitable foundation, with all profits generated spent on training its recruits. In 2004, Fifteen Amsterdam opened in The Netherlands. In 2006, Fifteen Cornwall will open and plans for a Fifteen Melbourne are in development.

Eric Kayser Boulangerie, the eponymous boulangerie (bakery-food) opened on Rue Monge in the Latin Quarter by artisan boulanger Eric Kayer, opened on at 8, rue Monge in the Latin Quarter on September 13, 1996.

Kayser, a fifth generation baker invented the Fermentolevain, a machine marketed by Electrolux Baking that creates and maintains a liquid leaven that he uses in his breads in lieu of yeast. The liquid leaven causes a lactic fermentation giving hints of milk, hazelnut, and honey to his breads. He uses only preservative-free, additive-free flour from Gâtinais and bakes “en continu.”

Kayser expanded his operations around Paris, with multiple storefronts and expanded abroad, first in Tokyo in 2001. As of 20007, there are 6 locations in Paris and 5 in Japan. Kayser further partnered with luminaries like Alain Ducasse for multiple other shops. Maison Kayser bakes 60 varities of bread, including monges, 50 types of pastries and 25 types of sweet breads. Each bakery offers a special bread particular to that location which bears its name.
